Birch Street Kitchen is a new café/bistro in Derry. Chef/owner Ben Mueller insists on local sourcing for all their menu selections that include produce, eggs, meats and dairy. Everything is made in-house, including the pickles, deli meats, salad dressings and fermented condiments. They make their own vinegars as well as sauerkraut and relishes. Foraged foods include fiddleheads, mushrooms and birch syrup from local trees.
When produce is out of season, they rely on preserved foods from last season's harvest. Cured bacon is paired with fresh-baked bread and a house-made fish sauce is spooned on freshly shucked oysters. Look for special dinners where the chefs show off their expertise and love of local foods.
