“Not everything needs to be covered with cheese,” says owner Shane Bodkins at Revolution Cantina in Claremont. Don’t let the Day of the Dead theme creep you out; the Cuban and Mexican favorites are given a touch of Costa Rican cuisine with black beans instead of pintos, a Lizano-style salsa and fresh-ground spices for a piquant and flavorful Latin experience. Partner Isabelle Guillen was born in Bolivia, but raised in Miami, so look for a very nice take on the Cuban pressed sandwiches on an imported bread. A nice selection of tequila is complemented by a fruit- or chili-infused version on the back bar. Wines are from Argentina. Sunday brunch brings the usual rancheros, but also a Latin twist on breakfast items. Tacos for $3 on Thursdays brings the flavors to gringos.
Don’t Miss: Paella with house-made chorizo, mussels, shrimp and chicken, simmered in Mexican saffron broth with jalapeños, onions, tomatoes and Spanish rice (pictured).
