Macaroon Cookies
Ingredients
3 cups sweetened flaked coconut
¾ cup sugar
3 egg whites
¼ teaspoon salt
1 teaspoon vanilla extract
Directions
Beat on medium speed all ingredients for 2 minutes.
Drop by teaspoon on parchment paper and bake for 25 minutes in a 325 degree oven.
When done, cool for 3 minutes then add cherry to center.
Makes about 40 cookies.
