It was just a matter of time. Patti and Rick MacMillan's family had owned Breakwind Farm on the Contoocook River for 200 years. Just two years ago the couple came back to a six-acre parcel where they started an organic garden and farmstand. As Rick says, "The winters are too long in New Hampshire" and they came up with another plan for year-round income.
Putting baked beans with Breakwind was just a natural and amusing fit. With various combinations of four types of organic beans (white, navy, pinto and black) Patti has created four recipes of baked beans with varied spices, sweetness and heat.
The Original is a classic recipe sweetened with molasses and maple syrup. The Texas Tornado has hickory-smoked chipotle peppers and the Jumping Jalapeño has a variety of peppers, vegetables and all four beans. Soothing Summer Breeze is more mild and, well, less noisy.
The secret is the beans are boiled with seaweed that helps removes some of the enzymes that can be difficult to digest. The MacMillans, in jest, consider these perfect for weddings and air flight.
Their humorous T-shirts may be even a bigger seller. "Follow me, I'm going to Breakwind … Breakwind Farm." Their latest catch phrase is "OrGASmic Baked Beans." I guess that says it all.
Available at the Tilton winter farmersmarket and Concord winter market through March and during the summer they attend fairs and the Contoocook and Henniker farmers markets. The baked beans are available in half pint ($4), pint ($7) and quart containers ($12).
