Banana Coffee Cake

Serves 12

2 cups flour

1 cup sugar

1 cup mashed ripe banana

1/2 cup butter

3 eggs

1 tablespoon lemon juice

1/2 teaspoon mace

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1/2 cup chopped walnuts or chocolate

chips (optional)

Pre heat oven to 350 degrees. Grease round tube or bundt pan.

Cream butter and sugar together until light and fluffy. In a separate bowl combine all dry ingredients. Mash the banana with the lemon juice in another bowl. Add the eggs one at a time to the butter mixture. Add the banana to the cream and sugar mixture then add the dry ingredients. Mix until well combined. Fold in nuts or chips. Bake 25 minutes or until toothpick inserted comes out clean.
