Dr. Alessio Fasano of the University of Maryland School of Medicine’s Center for Celiac Research did a study on gluten sensitivity and, based on his data, found that as many as 18 million Americans suffer from gluten sensitivity. And that number is growing.
What is gluten? A protein found in wheat that causes inflammation in the body and damages the lower intestine. People with gluten sensitivity or celiac disease avoid wheat, barley, kamut, spelt, oats and wheat germ in breads. The following are sources in New Hampshire for gluten-free breads.
