For a beer/food pairing Herlicka suggests the Texas-style brisket paired with the Moat Stout.

Fall is a great time to take a road trip to the North Country. The dog days of summer are over and whether you choose hiking or a scenic "leaf peeping," fall is a time of the year that signals the time for a more robust beer.

When in North Conway there's one stop I love to make: Moat Mountain. I love their Texas-style brisket paired with their Moat Stout. The roasted malts, hints of coffee and semi-dry finish really match well to their dry-rubbed smoked beef brisket.

If you get there at the right time and want to try something different, then I would definitely get their Octoberfest and pair it with their BBQ chicken pizza. A crisp, light nutty malt flavor with a bit of fruitiness and a clean finish balances out the sweet and sharp notes of the pizza.
