1 bunch of Romaine lettuce or other mixed greens
1 cup fresh corn kernels, blanch and remove from cob
1 15-ounce can black-eyed beans
1 large red pepper, diced
3 fresh peaches, peeled and sliced
Sweet Onion Dressing
1 cup chopped sweet onion (Vidalia, Walla Walla or local red-skinned onion)
½ cup honey
½ cup cider vinegar
1 cup olive oil
1 teaspoon salt
2 teaspoons dry mustard
1 cup crumbled goat cheese
Preparation - Directions
Mix salad ingredients together and toss with salad dressing.
Mix ingredients in blender or Vitamix until smooth.
Add dressing to salad. Top with grilled shrimp or chicken if desired.
